Throughout the Department’s response to the COVID-19 pandemic, it has been continually revealed the importance of achieving health equity through cultural competence, racial equity, and eliminating barriers that vulnerable populations face in healthcare systems and beyond. Did you know that testicular cancer is a form of cancer that occurs in a part of the male reproductive system, the testicles? Its symptoms include a lump in the testicle or swelling or pain in the scrotum. Testicular cancer mainly develops in young men between 20 to 35 years old. This form of cancer is highly treatable and curable, with a 90% chance of success if detected early. Find more information about this topic: www.testicularcancerawarenessfoundation.org Healthy Recipe of the MonthBright Spring Salad Ingredients1 bunch asparagus, tender parts, chopped into 1-inch pieces½ cup frozen peas, thawedA few handfuls of salad greens2 radishes, thinly sliced½ cup crumbled feta cheese½ avocado, pitted and diced¼ cup chopped, toasted pistachios½ cup roasted chickpeasFresh herbs, for garnish (basil, mint, and/or chives)Sea salt and freshly ground pepperInstructions Bring a large pot of salted water to a boil and set a bowl of ice water nearby. Blanch the asparagus for about 1 minute, until tender but still bright green. Transfer to the ice water for 1 minute, then drain. Allow the asparagus to dry and transfer it back to the bowl and add the peas. Assemble the salad. Arrange the salad greens on a platter, then layer the asparagus/pea mixture, the radishes, feta, avocado, pistachios, chickpeas, and herbs.
